Butterflied Leg of Lamb

This is a perfect cut of Ashlea Texel lamb for the barbecue as it is ‘slash-boned’ and opened out so it cooks much more quickly that the full leg on the bone or a ‘tunnel-boned’ rolled roast. It is gorgeous simply seasoned and seared on the outside while still pink and juicy in the middle. Remember to cover and rest the meat for 10 minutes before slicing.
