Layer of trimmed fat to retain tenderness and enhance flavour. Ideal for feeding a group or larger family. Sear fat-side down in a hot pan, sizzle to release some of the fat, then turn the beef in the fat to seal and colour it all over, about 5 mins. Place fat-side up into a roasting pan. Cook in a preheated oven (around 200 degrees), turning halfway through its cooking time for an even roast. Once roasted to preferred doneness remove the beef from the pan and leave to one side, loosely covered with foil, to rest for 15-20 mins.
