Lard has a mild, savoury flavour and a high smoke point. It’s well suited for sauteing and frying foods, and it makes the flakiest savoury crust. Some love it spread on a slice of bread. Don’t be afraid of using lard. It is a great stable fat for cooking and an excellent source of Vitamin D. Two groups of people who are well known for their longevity, the Vilcabamba in Ecuador and those living in Soviet Georgia traditionally consumed large amounts of lard (pig fat) in their diets.
